One of my favorite things–if not my favorite thing–from Monte Plata is the catibías. Every year, for Christmas, our Monte Plata family sends us catibías. They’re my favorite thing to eat for Christmas Eve dinner. Anytime we can get a hold of them before Christmastime, it’s a real treat.
Since we recently went to Monte Plata, we bought a big batch and stored them on the freezer. All that’s left to do is deep fry and crunchify. I think I’m gonna do that just now.
